Chardonnay L'Étoile

Domaine de Montbourgeau's L'Étoile is the estate's classic white, in which Chardonnay is accompanied by a few Savagnin vines within the vineyard. Fermentation takes place in stainless steel; after malolactic fermentation, the wine moves into small barrels and demi-muids for extended maturation. Blending precedes a further rest in tank before bottling. This approach belongs to a family tradition begun by Victor Gros, who planted the first vines in 1920. The property is in the village of L'Étoile, in the southwestern Jura, and retains a traditional approach to vinification.
