Description

Alice and Olivier De Moor's Bourgogne Chitry comes from two adjoining Chardonnay parcels in Chitry-le-Fort, a short distance from Courgis. Planting began in 1995, with vines growing in a thin layer of clay over solid limestone and facing northwest. Certified organic cultivation and hand harvesting precede gentle pressing and spontaneous fermentation. Maturation takes place on the lees without stirring or racking, using a combination of vessels. Bottled without fining or filtration, the wine reflects the patient work through which the De Moors also champion vineyards beyond the Chablis appellation.
