Description

Mont de Milieu occupies a hill whose name recalls the old boundary between Chablis and Champagne. Alice and Olivier De Moor's parcel faces south and is steep enough to require cultivation by horse. Its plantings include an upper section dating to the 1930s alongside more recent vines. The Chardonnay is organically farmed and harvested by hand, then gently pressed and fermented with native yeasts. Maturation on the lees, without stirring or racking, allows the wine to develop with limited intervention, keeping the identity of this Premier Cru at the centre of the process.
