Description

Coteau de Rosette is a single-parcel Chardonnay from approximately one hectare in Courgis, Alice and Olivier De Moor's home village. Planted around 1990, the vineyard combines Kimmeridgian limestone with an unusually substantial clay component for the estate. Organic cultivation is followed by patient winemaking, with extended alcoholic and malolactic fermentations. Maturation on the lees without racking limits intervention, while the choice of vessels responds to the volume of each harvest. It is among the sites the growers value most highly, expressed through a particularly individual interpretation of Chablis and its varied soils.
