Description

Denis Mortet’s Bonnes-Mares comes from Pinot Noir in the central part of the slope within Chambolle-Musigny. The parcel has pale earth over silt, with stony, highly calcareous soil. Vineyard cultivation excludes chemical fertilisers and herbicides, while grapes are harvested by hand into small crates. Following careful selection, fermentation relies on indigenous yeasts and measured extraction, before maturation in oak. The wine combines richness, dark fruit and spice with persistent freshness, accompanied by a chalky nuance on the finish that adds definition to its substantial character.
