Description

Denis Mortet’s Lavaux-Saint-Jacques comes from Pinot Noir on a pronounced south-facing slope. The soils are poor and stony at the top, becoming deeper and more clay-rich lower down. The nearby combe brings cool nights, contrasting with strong daytime sunshine. This combination supports the Premier Cru’s deep character. Harvesting is manual; fermentation with indigenous yeasts, moderate extraction and maturation in oak complete the cellar work. The wine presents a tightly woven yet velvety texture, ripe fruit and a persistent finish that gradually unfolds across the palate.
