Description

Le Chapitre reveals a less familiar part of the Côte de Nuits: an old vineyard south of Dijon, valued by Jean-Yves Bizot for its individual character. Pinot Noir comes from vines planted in 1960 on limestone ground. Harvesting and sorting are manual, while fermentation retains whole bunches and proceeds without sulfur additions. The wine matures in oak and is bottled by hand, one barrel at a time, with a reference identifying the vessel on each bottle. The cuvée combines the history of its site with a rigorous cellar practice founded on the precision of small lots.
