Description

Jean-Yves Bizot's Échézeaux draws on old Pinot Noir vines rooted in the Grand Cru's clay-limestone soils. The small scale of the holdings permits close attention from hand harvesting through fruit selection. In the cellar, bunches remain whole and vinification proceeds without sulfur additions, followed by maturation in oak barrels. Each barrel is bottled separately by hand and its reference appears on the label. This preserves the individuality of small lots and encapsulates an approach that prizes purity, subtlety and elegance, producing wines intended to reveal their character gradually rather than all at once.
