Description

Les Lavières explores a southwest-facing Premier Cru in Savigny-lès-Beaune, where limestone also appears as the thin slabs known as laves, historically used for roofing. Puy de l'Ours grows Pinot Noir here from vines planted in the early 1970s. Fermentation takes place with indigenous yeasts in temperature-controlled tanks, using measured pump-overs and punch-downs, followed by maturation in oak barrels. The cuvée connects its identity with this particular geology and the history of the parcel, offering a clearly focused perspective on the vineyards and landscape of Savigny-lès-Beaune.
