Description

Les Follettes brings together several parcels in Savigny-lès-Beaune: Petits Picotins, Grands Picotins, Aux Fourches and Saucours. Their clay-limestone soils and different exposures contribute to the construction of this Pinot Noir cuvée from Puy de l'Ours. The vines were planted between 1960 and 1979. Fermentation takes place with indigenous yeasts in temperature-controlled tanks, accompanied by pump-overs and a small number of punch-downs, before maturation in oak. The wine therefore emerges from the meeting of distinct small sites, gathered into one interpretation of the village and its heritage of established vines.
