Les Goudelettes is among the higher sites in Savigny-lès-Beaune, close to the entrance of the combe and facing east. Puy de l'Ours works Chardonnay planted in 1990 on stony, well-draining clay-limestone soils. The grapes are pressed as whole bunches; spontaneous fermentation begins in tank and continues after transfer by gravity into barrels. The wine matures on its lees, with occasional bâtonnage. This cuvée places a precise hillside origin at its centre, alongside a cellar process that accompanies the juice from pressing through maturation with carefully measured intervention at each stage.
