Description

Clavoillon occupies an important place among Domaine Leflaive’s holdings in Puligny-Montrachet. This Premier Cru is made from Chardonnay on clay-limestone soils, with parcels planted at different periods. Biodynamic farming and close attention to ripeness precede manual harvesting and grape selection. In the cellar, slow, gentle pressing is followed by settling of the juice. Fermentation takes place in oak, and the wine remains on its lees during maturation. A subsequent period in stainless steel completes the process before bottling, keeping the identity of this particular climat at its centre.
