Domaine Leflaive’s Les Combettes is a Puligny-Montrachet Premier Cru made from Chardonnay grown on clay-limestone soils. The estate’s holdings include vines planted in the 1960s and 1970s. Biodynamic vineyard care is combined with hand harvesting timed to the ripeness of individual parcels. Grapes are pressed gently, and the juice is allowed to settle before entering barrels. Both alcoholic and malolactic fermentation take place in oak. Subsequent maturation on the lees moves from wood to stainless steel, with fining and light filtration considered only when they are needed.
