Les Folatières presents a Puligny-Montrachet Premier Cru through the work of Domaine Leflaive. Chardonnay grows on clay-limestone soils, in holdings that include vines planted in the 1960s and at the end of the twentieth century. Biodynamic cultivation is accompanied by close monitoring of ripeness, followed by manual harvesting and selection. Gentle pneumatic pressing begins the cellar process; after settling, the juice ferments in oak barrels. The wine also undergoes malolactic fermentation and matures on its lees, spending an initial period in wood and a subsequent stage in stainless steel.
