Description

Les Aricoques' Roussette de Savoie 2021 explores Altesse through patient ageing on its lees. Romain Dupont and Guillaume Bellon use grapes from roughly fifty-year-old vines facing south and southwest on glacial moraine soils. Direct pressing and a short settling period precede fermentation in four-hundred-litre barrels previously used in Champagne. The wine remains on its lees for a year and is bottled without filtration. This is a separate interpretation of Altesse from Pan! Le Blanc, shaped by the relationship between mature vines, seasoned wood and an extended period of maturation in the cellar.
