Maxime Dubuet-Boillot's Carelle Sous La Chapelle comes from one of the family's historic vineyards, already cultivated in the 1920s. The producer regards it as one of the most subtle and elegant Premier Crus in the range, with substance supported by the clay component of its soils. Hand harvesting and grape selection precede vinification with some whole bunches and foot-treading. The wine matures in oak barrels. Freshness, harmony and well-integrated tannins define an interpretation of Volnay focused on finesse and a continuous, balanced progression across the palate.
