Nicolas Faure's Le Coteau des Bois comes from Pinot Noir planted in 2017 above Château Gris in Nuits-Saint-Georges. The vines occupy a particularly steep, east-facing slope that clearly defines their setting. Fermentation uses whole bunches and indigenous yeasts, with around three weeks in vat. An extended period in used barrels follows. The cellar process therefore retains the material of the whole bunch and accompanies the wine's maturation without relying on new oak, placing a single hillside origin at the centre of this separately identified Nuits-Saint-Georges cuvée.
