Description

Beauregard comes from Thomas Pico's Chardonnay vineyards near Courgis, rooted in Kimmeridgian clay and limestone. Pale, compact marl and a position within a relatively sheltered valley distinguish the site. Organic cultivation, central to Pattes Loup from its beginnings, is followed by patient cellar work: direct pressing, fermentation with native yeasts and maturation in previously used oak. Bottling without fining or filtration completes this single-site interpretation of Chablis, in which time in the cellar is an integral part of the effort to express the vineyard clearly and without unnecessary intervention.
