Description

Butteaux lies north of Courgis and belongs to the group of Premier Cru sites that may also be labelled Montmains. Thomas Pico highlights its relatively elevated position, open exposure to the wind and darker soils rich in brown clay. The Chardonnay is organically cultivated and interpreted through spontaneous fermentation, allowing the wine time to complete its development. Maturation on the lees and the use of seasoned vessels support Pattes Loup's pursuit of purity. This is a reading of the landscape grounded in differences between soils and the grower's attentive work.
