Pattes Loup's Vaillons brings Thomas Pico's approach to this Chablis Premier Cru. Chardonnay grows in Kimmeridgian marl and is cultivated organically, with attention to grape quality and the vitality of the vineyard. In the cellar, direct pressing precedes fermentation with native yeasts in previously used barrels. The wine completes malolactic fermentation and continues its maturation in seasoned demi-muids before being bottled without fining or filtration. The process favours unhurried development and measured intervention, allowing the identity of the site to remain evident in the substance of the white wine.
