Vent d'Ange Mise Tardive expresses Thomas Pico's relationship with the vineyards of Chablis through a deliberately unhurried cellar programme. Chardonnay comes from Kimmeridgian soils and organic cultivation, which the grower regards as the foundation of his work. Hand harvesting is followed by gentle pressing and fermentation with native yeasts. Extended contact with the lees allows the wine to develop its texture before bottling. The cuvée therefore connects patient maturation, the quality of the grapes and a personal interpretation of the landscape around Courgis and the wider Chablis region.
