Description

Sous la Velle is Maison Pierre-Henri Rougeot's parcel-specific Chardonnay from Meursault. The cuvée combines generosity with tension, qualities the producer associates with the way grapes ripen in this vineyard. Harvesting is manual, and whole bunches are pressed without crushing. Following cold settling, the juice ferments in barrel with indigenous yeasts; malolactic fermentation also takes place in oak. A subsequent move to stainless steel allows blending and a period of rest before bottling. This carefully considered sequence keeps the substance of Chardonnay at its centre, shaping a Meursault in which generous volume remains accompanied by forward movement.
