Les Maréchaudes interprets the Corton grand cru through Pierre-Olivier Garcia’s meticulous work. The vineyard lies towards the lower part of the hill, between Aloxe-Corton and Ladoix-Serrigny, on iron-rich clay soils. To the natural strength of this site, the producer brings exceptionally careful handling of Pinot Noir. Some berries are separated by hand with their pedicels intact, using the baie-par-baie technique, then combined with other grape preparations. The process seeks aromatic complexity and fine texture while retaining the substance of the cru. Oak maturation completes this reading, centred on preserving the integrity of the fruit.
