Pierre Girardin’s Meursault Premier Cru Les Perrières comes from the vineyard’s Dessous section, with old Chardonnay vines. The cuvée focuses attention on a precise part of the climat, making origin the starting point for the work. Fermentation takes place with indigenous yeasts, and the wine is raised in barrels larger than the traditional Burgundian pièce. A subsequent period in stainless steel completes maturation before bottling without fining or filtration. This sequence preserves the central role of the vineyard and the individual identity of this Meursault Premier Cru.
