The 2021 Rao Chardonnay from Domaine Simha is a white wine grown in Tasmania’s Derwent Valley. A single-vineyard, hand-harvested Chardonnay, it is whole-bunch pressed, undergoes wild fermentation in new demi-muid and is aged 12 months on the lees. Bottled unfined and unfiltered and produced in limited allocations, the wine is 100% Chardonnay.
