Description

Thierry Pillot's 2018 Volnay Les Santenots comes from Pinot Noir vines more than forty-five years old, facing east at an altitude of approximately 280 metres. Farming follows organic practices. In the cellar, half the harvest is retained as whole bunches and fermentation begins with indigenous yeasts. Maturation takes place in barrel, with one quarter new oak, before bottling without fining or filtration. This sequence provides a concrete expression of Pillot's approach to red Santenots, bringing together mature vines, attentive vineyard work and handling that respects the raw material throughout the wine's development in the cellar.
