Derrière Saint-Jean is Violot-Guillemard's tiny Premier Cru monopole, planted in front of the family home in Pommard. The parcel covers just under ten ares and is devoted to Pinot Noir. The domaine describes a solid character associated with the Beaune-facing side of Pommard, without excessive force. Vinification includes fermentation in wooden vats and pneumatic pressing, followed by maturation in oak. Attention to the soil, farmed according to organic principles since 1999, and a preference for measured intervention support an interpretation of the cru centred on finesse, balance and a clear sense of place.
