Domaines Schlumberger's Cuvée Clarisse is a Pinot Gris Sélection de Grains Nobles sourced exclusively from Grand Cru Spiegel. The vineyard lies midway up an east-facing slope, on volcanic-clay soils with a marl-and-sandstone substratum. The grapes are harvested by hand when overripe and transported in small crates before slow pressing. The clarified must ferments in temperature-controlled foudres; the wine then rests in bottle at the estate before release. This concentrated sweet selection explores Pinot Gris's character and its ability to develop gradually with time.
