Albillo Viñas Viejas explores the heritage of white grapes preserved in La Aguilera's old vineyards. Jorge Monzón selects Albillo vines with small clusters that turn deeply golden when fully ripe, giving them a separate expression within Dominio del Águila. The high-altitude vineyards grow on soils combining limestone, clay, sand and gravel. Hand harvesting is followed by whole-bunch processing and a slow fermentation with indigenous yeasts in French oak. Extended contact with the lees, without bâtonnage, continues a patient approach in the cellar, allowing the wine to develop at its own pace.
