Description
Dubreuil-Fontaine's Notre-Dame de Bonne Espérance is a red Bourgogne made from Pinot Noir in four parcels across Savigny, Ladoix and Pommard, including the Chapelle Notre-Dame climat. The soils are clay-limestone. Hand harvesting and sorting precede destemming and vinification in temperature-controlled stainless steel. Maturation combines steel tanks and previously used oak barrels. The bouquet suggests blackberry coulis and raspberry; the palate has light tannins, with red fruit and spice on the finish. Suggested matches include barbecued meats and vegetables, savoury pies and roast suckling pig for this regional red.
