Dubreuil-Fontaine's Pernand Ile des Vergelesses Premier Cru is made from Pinot Noir in a southeast-facing parcel halfway up the hillside. Its clay-limestone soils are of intermediate depth. After hand harvesting and selection, the grapes are destemmed and vinified in temperature-controlled stainless steel before oak ageing. The bouquet centres on dark fruit; cherry, blueberry and black olive appear on the palate, with a supple texture and ripe tannins. The wine brings together fruit volume and finesse. Suggested matches include osso buco, veal with mushrooms, ratatouille and Comté cheese.
