Dubreuil-Fontaine's Pernand-Vergelesses Blanc brings together Chardonnay from four main parcels on both sides of the Frétille hill, with clay-limestone soils. Hand harvesting and sorting precede fermentation divided between stainless steel and oak, with malolactic fermentation completed. Ageing also uses egg-shaped concrete vessels alongside tanks and barrels. The bouquet combines citrus, orange and lemon blossom, pear and peach. Acidity gives the palate energy, with a suggestion of lemongrass on the finish. Sushi, cod cooked in a parcel, prawns and fresh cheeses are among the suggested accompaniments.
