Dubreuil-Fontaine's Les Vergelesses Blanc is a Savigny-lès-Beaune Premier Cru made from Chardonnay. The parcel lies halfway up the slope, facing southeast, on clay-limestone soils. Grapes are hand-harvested and selected. Fermentation takes place in oak barrels and includes completion of malolactic fermentation; maturation also takes place in wood. The bouquet is delicately floral, with a suggestion of apple blossom. The palate is balanced, with apple, pear, liquorice, a light mineral character and persistence. Grilled salmon, roast poultry, shellfish and goat cheese are suitable suggested accompaniments.
