Egly-Ouriet’s Ambonnay Rouge Cuvée des Grands Côtes is a still Pinot Noir under the Coteaux Champenois appellation. It comes from old vines in Ambonnay on a south-facing slope with a significant clay component. Farming follows organic practices and fermentation uses indigenous yeasts. The wine ferments and matures in barrel, then is bottled by hand without fining or filtration. The cuvée places Pinot Noir and its origin at the centre of its expression, through a process that maintains the separate identity of this red wine within the estate’s production.
