Egly-Ouriet’s Extra Brut Grand Cru combines Pinot Noir and Chardonnay, with the former predominating, and includes reserve wines in the blend. The cuvée belongs to the production of the family estate in Ambonnay. The wines are handled in oak with indigenous yeasts and allowed to clarify slowly before bottling without fining or filtration. Time on the lees is central to the estate’s style and accompanies a restrained dosage.
