Description

Chétillon de Haut expresses the Chardonnay side of Élise Bougy's work in the Grand Cru village of Le Mesnil-sur-Oger. The parcel lies in the upper part of the vineyard, on chalk and limestone-derived material that are fundamental to its identity. Fermentation starts spontaneously and the wine undergoes malolactic conversion, with wood forming part of its maturation. Secondary fermentation in bottle and lees ageing complete the cuvée. This Blanc de Blancs is built around a precise origin, pursuing a balance between texture, finesse and the distinctive character of its vineyard rather than a broad regional blend.
