Description
Le Mont Chainqueux reflects Élise Bougy's family roots in Les Mesneux, in the Montagne de Reims. Pinot Noir and Meunier grow together in the parcel planted by her grandparents in 1965, on a southeast-facing slope with soils combining silt, chalk, clay and sand. Spontaneous fermentation, malolactic conversion and maturation in wooden vessels form the cellar approach. Following secondary fermentation in bottle, the wine rests on its lees before disgorgement. This is a clearly site-focused Blanc de Noirs, bringing the two dark-skinned varieties together while retaining the geological diversity found within the vineyard.
