Les Coullemets focuses Élise Bougy's attention on a small parcel in the lower part of Le Mesnil-sur-Oger. Once owned by her grandmother Marie-Louise Moriset, the vineyard maintains a strong connection with the family's history and the Grand Cru's chalk soils. Chardonnay is vinified and matured in demi-muids, with spontaneous fermentation and malolactic conversion. Subsequent lees ageing in bottle takes place under natural cork before disgorgement without dosage. A further rest before release completes this patient process, keeping the individuality of the site at the centre of the wine and its development.
