Description
Sous Le Mont Blanc comes from the Malo lieu-dit, on an east- to southeast-facing slope in Le Mesnil-sur-Oger. Its name refers to the brilliant white chalk beneath this small parcel at the edge of woodland. Élise Bougy makes a Grand Cru Blanc de Blancs from its Chardonnay, using indigenous yeasts and a combination of demi-muids and stainless steel, with spontaneous malolactic conversion. Extended lees ageing precedes disgorgement without dosage, and the wine is neither fined nor filtered. The cuvée continues her exploration of Le Mesnil's different vineyard expressions while preserving the identity of each origin.
