Description

Montepulciano d'Abruzzo held in reserve represents Emidio Pepe's central insight: time as an essential part of the wine. In Torano Nuovo, between the Adriatic and Gran Sasso, the family works with this local variety through manual harvesting and hand destemming, leaving the berries almost intact. Spontaneous fermentation takes place in concrete, a neutral vessel that accompanies the wine before ageing in glass. Bottles are kept in the historic cellar and released gradually when the family considers a vintage ready. It is an expression built to develop, rooted in continuity of method and the individuality of each harvest.
