Description

Emmerich Knoll’s Riesling Vinothekfüllung Smaragd brings together grapes from different terraced vineyards in Unterloiben, in the Wachau. Southern exposure and primary-rock soils, including gneiss and components of loess, define the setting for this selection. Harvesting is manual and selective. Bunches are not destemmed before pressing, and the must is worked in wooden vessels and stainless steel. A period on the lees follows, without bâtonnage. The cuvée thus connects the variety with several local parcels through a process involving selection in the vineyard and subsequent rest on the fermentation lees.
