Description
Collavini’s Oltre il Giardino Sauvignon 2024 comes from San Floriano del Collio and interprets the variety through a vineyard selected for its geological characteristics. The project, developed by Giovanni and Luigi Collavini, comprises four single-variety whites from Collio and Colli Orientali. Grapes are harvested by hand and pressed whole; fermentation and nine months of maturation take place in wood. The profile recalls sage, orange blossom and mango. On the palate, roundness is accompanied by savoury character and fragrance, with a tropical component remaining through the finish.
