Les Rachais from Francis Boulard is a single-parcel, vintage cuvée from the Massif de Saint-Thierry. It is a Blanc de Blancs made entirely from Chardonnay, produced biodynamically and released as a Brut Nature (zero dosage). Vinification uses spontaneous fermentation and lees ageing in oak, producing aromas of white fruit, citrus and subtle pastry notes.
