Description

Cuvée du Professeur Ouillé presents François Rousset-Martin’s Savagnin through regular barrel topping during maturation. The grapes come from Sous-Roche, beneath the cliff of Château-Chalon, on a south- and southwest-facing slope with limestone and marl soils. Farming follows organic practices and fermentation begins spontaneously in previously used wood. The wine remains on its own lees and is bottled without fining or filtration. The term Ouillé distinguishes this interpretation from versions aged under a veil of yeast: the focus remains on Savagnin, its vineyard and a cellar approach that respects their individual character and particular origin.
