Gaia Wines’ Ammonite comes from Assyrtiko grown in an ancient Santorini vineyard called Thalassina, high in Megalochori. These ungrafted, century-old vines grow in porous, nutrient-poor volcanic soils. The producer presents Ammonite as a white wine with substantial structure, complexity and a persistent finish, capable of developing over time when stored appropriately. Its name refers to the marine fossil that serves as the winery’s emblem. The spiral on the label draws on the Fibonacci sequence, linking the wine’s presentation to the geometric harmony of the ammonite itself.
