Description

Thalassitis Submerged is made from Assyrtiko grown on old, ungrafted vines in Santorini’s Episkopi, Pyrgos and Akrotiri areas. After bottling, a portion of the wine is submerged in the Aegean Sea, off the island’s eastern coast, at a depth of around 25 metres. Darkness and a stable temperature accompany its underwater maturation. Gaia began the project in 2009 and continues it through successive immersions and recoveries. In the glass, the wine retains a bright colour while smoky and hydrocarbon notes emerge; the palate develops a rounder, more mature texture during this unusual ageing process.
