Description
Blanc de Noirs Tome V centres on Pinot Noir from the family's parcels in Écueil and Sacy, now tended by Gaspard Brochet. This edition brings several vineyards together while remaining entirely focused on one grape variety. Hand harvesting and indigenous yeasts accompany a restrained cellar approach, with maturation in used barriques and lees stirring. Malolactic fermentation is not carried out; secondary fermentation, lees ageing and hand riddling follow. A low dosage completes a process that places the quality of the fruit and careful, small-scale craftsmanship at the centre of the wine's identity.
