Description

Gaspard Brochet's Pinot Rosé Tome IV is made entirely from Pinot Noir, with its colour obtained through a particular pressing fraction: the more deeply coloured première taille from direct pressing. Fermentation takes place with indigenous yeasts in old barrels, without malolactic conversion. After wood maturation, the wine begins its second fermentation without fining or filtration. Lees ageing is followed by hand riddling and disgorgement, with a restrained dosage completing the process. This rosé is therefore defined by deliberate choices at the press and in the cellar, forming part of the Écueil grower's personal, small-scale approach.
