Description

Credere is Giovanni Genio’s pure Refosco Nostrano, produced at Savorgnano del Torre in the Friuli Colli Orientali. Grapes are harvested into crates and destemmed before fermentation, which takes place with skin maceration in open vats and manual punchdowns. Maturation continues on the lees in small oak casks, followed by resting in bottle; clarification is achieved through natural settling. The wine has a dry, spicy profile supported by acidity, noticeable but fine tannins and a pronounced mineral character. It accompanies Friulian sopressa sausage, red meat and game.
