Description

Pierre Gimonnet & Fils’ Œnophile Non Dosé 2020 is a millésimé 1er Cru Blanc de Blancs Champagne made from 100% Chardonnay and bottled as Brut Nature (no dosage). The cuvée combines grapes from the Côte des Blancs—notably Grand Cru sites such as Cramant, Chouilly and Oger, alongside Premier Cru parcels in Cuis and Vertus—and is given extended lees ageing. It displays a chalky minerality and focused structure, which pairs well with shellfish and other seafood dishes.
